Torsh Tareh: A Taste of Gilan’s Emerald Forests

The Rhythm of the Rain

In our village in Gilan, the mornings begin with the scent of damp earth and woodsmoke. As the mist lifts from the emerald rice paddies, I head to the garden to gather wild herbs. Today, we are making Torsh Tareh, a vibrant, sour stew that captures the very essence of our land.

The Recipe

  • Ingredients: Fresh spinach, cilantro, parsley, dill, mint, garlic, chickpea flour, sour orange juice (or verjuice), and eggs.

  • Method:

    1. Finely chop the herbs and sauté with garlic in a clay pot.
    2. Add the spinach and cook until wilted.
    3. Whisk the chickpea flour with sour juice and add to the pot.
    4. Simmer until the aromas fill the cottage, then swirl in lightly beaten eggs.

Serve with warm, crusty flatbread and raw onion. It is more than a meal; it is a slow, soulful reminder of home.
