The Rustic Magic of Mahi Fovij: A Gilani Stuffed Fish Recipe

October 25, 2026

In the quiet embrace of the Caspian coast, where the mist settles over the mountains, there is a rhythm to life that moves as slowly as the embers of a wood fire. Here, the kitchen is the heart of the home, and today, we are preparing Mahi Fovij—a traditional Gilani stuffed fish.

Listen to the rhythmic chopping of fresh cilantro, mint, and local herbs on a wooden board. The scent of crushed walnuts blends with the tart, deep aroma of thick pomegranate paste. We score the fresh catch, gently massaging it with coarse salt, before filling its belly with this dark, jewel-like paste.

As the fish slowly roasts over glowing coals, the skin blisters and crisps, while the inside remains tender, infused with the rich, earthy flavors of the forest and orchard.
