Kuku Badkoobei: A Rustic Gilani Layered Chicken Kuku
October 21, 2026
The morning mist rolls gently over the Alborz mountains, bringing with it a quiet whisper of the Caspian Sea. In a rustic kitchen tucked away in the lush forests of Gilan, the hearth crackles softly. Today, we are slowing down to honor a beautiful tradition: Kuku Badkoobei.
Originally hailing from Baku (Badkubeh) but deeply embraced and adapted by the loving hands of Gilani grandmothers, this majestic layered kuku tells a story of migration, warmth, and the simple joys of slow living. Unlike our delicate herb kukus, Kuku Badkoobei is substantial and comforting, weaving together tender shredded chicken, golden potatoes, and the gentle crunch of barberries (zereshk).
Every step of this recipe is a meditation. The soft simmering of the chicken in fragrant spices, the gentle dicing of the potatoes, and the rhythmic whisking of farm-fresh eggs. It is a dish that invites you to breathe, to listen to the wooden spoon against the ceramic bowl, and to find peace in the present moment.
The Rustic Recipe
Ingredients:
- 2 cups cooked, finely shredded chicken breast (simmered with onion, turmeric, and a pinch of salt)
- 2 medium potatoes, peeled and diced very finely
- 1 large onion, finely chopped
- 5-6 fresh eggs from the coop
- 1/4 cup barberries (zereshk), washed and dried
- 1/4 cup chopped walnuts (optional, but adds a lovely earthiness)
- 1 teaspoon turmeric
- 1/2 teaspoon black pepper
- 1 teaspoon sea salt
- A pinch of saffron bloomed in 1 tablespoon of warm water
- Butter or ghee for frying
Instructions:
- The Gentle Sauté: In a cast-iron skillet, melt a spoonful of ghee over medium heat. Add the chopped onions and listen to them sizzle as they turn a beautiful, translucent gold. Add the finely diced potatoes and sauté gently until they are soft and slightly crisped at the edges. Let them cool.
- The Golden Binding: In a large, earthy bowl, crack the fresh eggs. Whisk them softly until the yolks and whites dance together. Pour in the bloomed saffron, witnessing the vibrant sunset hue spread through the mixture.
- The Gathering: Fold the shredded chicken, the cooled potato and onion mixture, barberries, walnuts, turmeric, salt, and pepper into the eggs. Stir slowly, ensuring every ingredient is lovingly coated.
- The Bake: Heat a generous dollop of butter in your skillet until it foams gently. Pour the kuku mixture in, smoothing the top with the back of your spoon. Cover with a lid, turn the heat to the lowest whisper, and let it cook patiently for about 20 minutes.
- The Turn: Once the edges are golden and the center is set, carefully invert the kuku onto a plate, adding a touch more butter to the pan before sliding it back in to crisp the other side for another 10 minutes.
Slice it into thick, rustic wedges. Serve it warm with a side of fresh herbs, a slice of crusty bread, and a steaming cup of tea. Let each bite remind you of the beauty of a quiet life.
